Potassium sorbate potassium sorbate, also known as 2, 4-hexadienoate potassium, is the potassium salt of sorbate, a kind of Food Preservative, the molecular formula is C6H7O2K, white to light yellow scaly crystals, crystal particles or crystal powder, odorless or slightly smelly, easy to absorb moisture in the air for a long time, oxidative decomposition and discoloration.  Soluble in water, propylene glycol and ethanol.  It is often used as a preservative, destroying many enzyme systems by binding to the sulfhydryl groups of microbial enzyme systems. Production process

There are two main synthesis methods of sorbic acid, one is the reaction of butenal with acetone under specific conditions, and the other is the reaction of butenal and ketone as raw materials under specific technological conditions, which is the most commonly used synthesis method.  Butenal mainly comes from the condensation of acetaldehyde, while ketene is formed by the cracking of acetic acid, and further by the reaction of sorbate with potassium hydroxide to form potassium sorbate.
